Preheat oven to 400℉. Dice apricots and chop parsley. Add apricots, parsley, breadcrumbs and PERi-PERi sauce to the sausage meat. Mix!
Cut the crust off the white bread, then spread in a row with a quarter inch over lapping. Use a rolling pin to roll 'em thin
Place meat mixture centered along the thinned bread
Crack egg into a bowl and mix. Brush egg wash onto the sides of the bread. Then roll the bread over to cover the meat and seal by pressing a fork along the edge
Brush egg wash on top of the rolled bread, then sprinkle sesame seeds. Bake for 15 minutes
Cut into quarters and don't forget PERi-PERi for dipping!
