Trim the pork loin and chop into 1.5 inch cubes. Place in a Tupperware for marinating.
Trim and chop the pineapple, red onion and green pepper into 1 inch cubes and put into the marinating dish.
Stir in the PERi-PERi sauce, and the salt, and mix well. Marinate in the fridge for a minimum of 30 minutes and up to 24 hours in advance.
Thread wooden or metal skewers with the pork, alternating with red onion, green peppers and pineapple pieces.
Light up your grill! Cook the skewers for about 25 mins, turning every 7 minutes or so, until the internal temperature reaches 160ºF
