Chorizo, sweet potato, egg and PERi-PERi complement each other so well in this hash recipe.

Ingredients

  • 4 tbsp PERi-PERi sauce
  • 4 tbsp feta (pre-crumbled)
  • 2 tbsp olive oil
  • 2 tsp chopped parsley
  • 2 poached eggs
  • 1 large sweet potato
  • 1 red onion
  • 1 red pepper
  • 1/2 cup chorizo

Cooking Instructions

1 Heat oil in a large frying pan and add onion and red pepper. Cook for 5 minutes
2 Turn heat down to medium. Add the chorizo and sweet potato, then cook for 12-115 minutes (until the sweet potato is tender and looking tasty)
3 Add PERi-PERi sauce and parsley
4 Finish with a poached egg and crumbled feta. Feast!
