Ingredients

  • 2 Eggs
  • 4 Tablespoons of cream
  • 2 Tablespoons Nando's PERi-PERi, flavor of your choice
  • 25 g (heaping 1/8 cups) sharp white cheddar cheese, grated
  • Small handful baby kale or spinach
  • Salt and pepper

Cooking Instructions

1 Pour half the cream into a mug.
2 Add half the baby kale.
3 Crack in an egg, then pierce the yolk (this prevents it from exploding in the microwave!)
4 Sprinkle over half the cheese, 1 tablespoon of PERi-PERi and a sprinkle salt and pepper.
5 Repeat with the other half of your cream, baby kale, second egg (pierce the yolk), cheese, PERi-PERi and salt and pepper.
6 Place in the microwave and cover with a piece of paper towel (it spits). Microwave on full power for 1 minute 30 seconds.
7 Drizzle with more PERi-PERi because you can never have too much!
